Quiche, it’s whats for dinner.
I had some extra veggies from the farmer’s market that I needed to use up, and I decided to try my luck using them in a quiche.
Holy cow, did it turn out amazing. So amazing in fact that my family members who do not like quiche actually asked for seconds.
So we all know we should be eating our veggies, but did you know only 13% of Americans eat the recommended amount each day? Odds are good that you want (or “need”) to get more greens onto your plate. Great news: It’s easy to add more greens (reds, oranges, yellows, and purples) into your diet….
Neither my husband nor I started out loving veggies. Years ago, words like “kale” or “brussels sprouts” would send shivers down our spines. That has changed. Now we love roasted brussels sprouts and frequently add kale to our soups and smoothies. And our young kids love eating them too (cue birdsong and waterfall sound effects)….
